Dragon fruits are non-climacteric and usually harvested at full colour change (when the peel turned completely red at 30-35 day after flowering) in order to obtain the best eating quality. Harvesting indices of dragon fruit include colour, SSC, TA and days-from-flowering (minimum 32 days).
